Spiralized Carrot and Yukon Gold Baked Fries

Today I experimented with our spiralizer! The plan was to cook up some potatoes for dinner, but then added some carrot chips to the mix too!

I’ve been following the Inspiralized blog for awhile now and there are a ton of great recipes I’ve been wanting to try. If you haven’t checked out the site, get to it! My husband and I bought a spiralizer for both of our parents and my brother because we found it so great and easy to use.

So today- on one of the hottest days of the year mind you- I decided to crank up the oven! Both versions of fries were super easy and customizable! Basically spiralize your root vegetable of choice, breaking apart into smaller pieces as you go. Toss the veggies in olive oil, salt, pepper, garlic and any other favorite seasoning. Bake in a 450 degree oven for about 20 minutes, flipping at least once and keeping an eye out for pieces getting to crispy.

The finished produced- Yukon Gold Curly fries (half with Italian seasoning) and Carrot Chips (sprinkled with fresh dill at the end).
